Yeasts
Yeast is a necessary and defining ingredient of beer. During the mash, the carbohydrates (starch) in the grain are converted to simpler sugars, and it is up to the yeast to convert these simple sugars into alcohol, carbon dioxide and a host of other compounds during the process called fermentation. Many yeast strains produce variety of flavor compounds, making the fermented beer a completely different product than the wort the yeast is added to.
Yeast strains used for beer brewing can be very roughly grouped into four categories: top-fermenting (typically used for ales), bottom-fermenting (typically used for lagers), hybrid strains (have some properties of both lager and ale yeasts), and finally wild yeasts and bacteria, covering other micro-organisms that can be used for fermenting your beer. By far the most commonly used among beginner homebrewers are the top-fermenting ale yeasts, as they are quite forgiving and generally easy to get good results with. However, there can be huge differences in the properties and resulting flavors of the individual yeast strains within these groups, so it is important to carefully consider which yeast strain is appropriate for the beer you are brewing.
